For the cake
  • 3 large eggs 3 uova grandi

  • 1 teaspoon 1 cucchiaino di lievito per dolci
  • 1/4 teaspoon 1/4 cucchiaino di sale

Method
 

Preparation
  1. Preheat the oven to 175°C.
  2. Line a round cake pan (18-20 cm) with parchment paper.
  3. In a bowl, whisk together the eggs, honey, Greek yogurt, and vanilla extract until smooth.
  4. Add the shredded coconut, almond flour, baking powder, and salt, and mix until well combined.
  5. Pour the batter into the prepared cake pan and level the surface.
Baking
  1. Bake in the oven for 25-30 minutes, or until the surface is golden and a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack.
  3. Serve plain or with a spoonful of yogurt and a sprinkle of extra coconut.

Serve the cake with fresh fruits such as raspberries or strawberries for a special occasion.
