Preparation
- Preheat the oven to 175°C.
- Line a round cake pan (18-20 cm) with parchment paper.
- In a bowl, whisk together the eggs, honey, Greek yogurt, and vanilla extract until smooth.
- Add the shredded coconut, almond flour, baking powder, and salt, and mix until well combined.
- Pour the batter into the prepared cake pan and level the surface.
Baking
- Bake in the oven for 25-30 minutes, or until the surface is golden and a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack.
- Serve plain or with a spoonful of yogurt and a sprinkle of extra coconut.
Note
Serve the cake with fresh fruits such as raspberries or strawberries for a special occasion.
